2 ¼ cups sugar
½ cup water
½ cup light corn syrup
¼ teaspoon salt
2 egg whites
1 ½ teaspoons vanilla
½ cup chopped nuts (optional)
½ cup chopped candied cherries (optional)
- Mix together sugar, water, corn syrup and salt in a 2 quart bowl.
- Loosely cover with a lid or plastic wrap. Microwave on high for 5 to 6 minutes or until boiling. Uncover. Microwave on high for 8 to 10 minutes or until hard ball stage is reached.
- Meanwhile, beat egg whites until stiff.
- Slowly pour hot syrup over egg whites while beating at high speed of mixer. Add vanilla and continue to beat for 4 to 5 minutes or until candy holds its shape.
- Fold in nuts and cherries.
- Quickly drop teaspoons of candy onto waxed paper. Candy should be completely set in a few hours.
- Don’t attempt to make divinity when it’s raining or snowing. The candy won’t set because of the humidity.
