Microwave Divinity by Jill F.

2 ¼ cups sugar
½ cup water
½ cup light corn syrup
¼ teaspoon salt
2 egg whites
1 ½ teaspoons vanilla
½ cup chopped nuts (optional)
½ cup chopped candied cherries (optional)

  1. Mix together sugar, water, corn syrup and salt in a 2 quart bowl.
  2. Loosely cover with a lid or plastic wrap.  Microwave on high for 5 to 6 minutes or until boiling.  Uncover.  Microwave on high for 8 to 10 minutes or until hard ball stage is reached.
  3. Meanwhile, beat egg whites until stiff.
  4. Slowly pour hot syrup over egg whites while beating at high speed of mixer.  Add vanilla and continue to beat for 4 to 5 minutes or until candy holds its shape.
  5. Fold in nuts and cherries.
  6. Quickly drop teaspoons of candy onto waxed paper.  Candy should be completely set in a few hours.
  7. Don’t attempt to make divinity when it’s raining or snowing.  The candy won’t set because of the humidity.
