1 package Devils Food cake mix
2 eggs
3/4 cup shortening
1/2 tsp vanilla
Andes Mints (preferable green brown green)
Beat all ingredients together to form a thick batter. Form into quarter size balls (I use a cookie scoop). Bake at 375 for 6-8 minutes. Immediately after removing from oven place unwrapped Andes Mint in the center of cookie and push down gently. Smother surface with a spoon. Makes about 4 dozen depending on the size of the cookie.
