Orange Snowballs by Marci A.

1 C butter
¾ C sifted powdered sugar
1 T finely shredded orange peel (set aside)
2 tsp. finely shredded orange peel (set aside)
1 T orange juice
2 2/3 C all-purpose flour
Granulated sugar
¾ C granulated sugar

1. In large mixing bowl beat butter with electric mixer on medium to high speed for 30 seconds. Add powdered sugar, beat until combined. Beat in orange juice until combined. Beat in as much flour as you can with mixer. Stir in remaining flour and the 1 T orange peel with a wooden spoon.

2. Shape dough into 1 ¼ inch balls. Roll in granulated sugar. Place 2 inches apart on an ungreased cookie sheet.

3. Bake in a 325 degree oven for about 15 minutes or until bottoms are lightly browned. Let cool on cookie sheet for 5 minutes.

4. Meanwhile, in a food processor or a blender container combine the ¾ C sugar and 2 tsp. orange peel. Cover and process or blend until mixture is combined. Roll warm baked cookies in the sugar mixture. Let cool.
